Recipe: Chicken Piccata with Quinoa in the Ninja 3-in-1 cooker

I made a brand new recipe in my new Ninja 3-in-1 cooker!  This time I made Chicken Piccata with Quinoa.  This was a HUGE hit!  Chris said he would like this regularly.    Neither of us had ever had Quinoa before (it’s pronounced “kin’-wa”) and it reminded me  of a cross between rice and couscous and it was delicious!   It had so much flavor!

You will need:

  • 2-4 chicken breasts (I used 2 and butterflied them)
  • 2 Tablespoons of flour, and salt and pepper to coat the chicken
  • 1/3 cup lemon juice
  • 2 cups of chicken broth (OR 1 cup chicken broth & 1 cup cooking wine)
  • 4 Tablespoons butter
  • 2 Tablespoons olive oil
  • 1 Tablespoon capers
  • 1 Cup Quinoa

I made mine in my Ninja, but if you don’t have a Ninja, just use a pan on your stovetop.  Dip your chicken in the flour, salt & pepper to coat, and then fry the chicken in melted butter & oil until brown on both sides and cooked through. Either set aside the chicken and cover with foil around it to keep warm, or keep in a warm oven.   Add the lemon juice, chicken broth, capers and quinoa to the pan.  Cook on low for about 10-15 minutes until the quinoa is cooked through.

This dish is delicious!  You can add any veggie to it, like asparagus, beans, or broccoli.   Makes a great meal!
